Its been a while since I cooked, let alone bake. We’ve shifted back home finally and things have slowly fallen back in place. The little one had a funny jet lag for the first week, then the adjustment to the new place, people, climate, everything ! So its Christmas and my in laws wanted to experiment our convection microwave oven to bake a cake and that’s how this cake happenned. I got an easy recipe where both caramelized sugar and granulated sugar are added to the batter. I messed up with the measurements given in the original recipe and added more caramelised sugar and less granulated sugar. Also I dint add as much cashewnuts as per the original recipe Thankfully the cake came out well so I guess I have accidentally created my own version of this cake.
